Aku Poki

INGREDIENTS

  • 2 lb. Aku
  • 3 T. Grated Ginger
  • 1/2 C. Finely Chopped Green Onions
  • 1/2 C. Soy Sauce
  • 2 T. Ground, Toasted Sesame Seeds (opt.)

DIRECTIONS
Three simple steps to follow:
1) Cut Aku into 3/4-inch cubes.
2) Combine all ingredients before serving.
3) Add Aku cubes and mix all ingredients together.

This recipe yields 5 cups. Serves 12-16.

Hawaiian Potato Salad

INGREDIENTS

  • 4-5 large potatoes
  • 1 cup shell macaroni-dry
  • 1-2 carrots chopped
  • 2 celery stalks-chopped
  • 2-3 pickles to taste-chopped
  • 1 cup peas
  • 2 stalks green onion-chopped
  • cubed cured ham (optional)
  • salt and pepper to taste

Dressing:

 

  • 1 cup mayonnaise OR plain yogurt
  • 1/2 cup Zesty Italian dressing
  • 2 T. pickle juice (or less) 


Cooking Instructions 

Boil potatoes until tender. Cool and cut into cubes. Cook macaroni per package directions. Toss with remaining ingredients. Add dressing.

Corn and Bean Salad

Ingredients

1 ear fresh corn, cooked, or 1 can drained

1 can beans – kidney/black, rinsed

1 avocado, peeled and cubed (6oz)

1/2 cup salsa

Optional: 1 pepper, 1/4 red onion, 1/2 bunch cilantro, 1 tomato – all chopped.

Mix ingredients together. Makes about 8-10 1/2 cup portions without optional ingredients. 103 calories/serving.
